Bruschetta and Melbourne

It has been many days since I posted any recipe.Well!there is a good reason for it.We have been to Melbourne for these holidays and after coming back from Melbourne, we are busy in visiting Sydney surroundings. I hope you all had a great holiday and a happy new year.Here I am sharing some of pictures.Melbourne is a great place to see and the city is quiet?(compared to Sydney),people are friendly and the trip will not be complete without visiting "Twelve apostles".This is the place I want to see from many days and really loved this place.Green water, blue sky and in between them, apostles standing elegantly, and you will hear nothing but sound of water and here I lost myself in tranquility  and wish to see this place again and again.In fact I am dreaming that if I live in  Melbourne I would have visited this place once in a month.(Its nearly 250kms drive from Melbourne CBD)




 After coming back from holidays, I served Bruschetta as breakfast on one lazy Sunday morning and it tasted great. It is very easy to prepare and no effort is needed, just mixing and tossing the ingredients.
Here goes the recipe:

Ingredients:
Bread slices-4(Preferably Bruschetta bread. As I don't have it handy I used normal  white bread)
Sun dried tomato-1/2 cup
Fresh tomato-1medium chopped
Salt and pepper to taste
Coriander and parsley leaves-2tbsp
Olive oil-2tsp
Garlic -1cove finely chopped
Cheese-2tsp

Method:
Mix all the ingredients except fresh tomato and cheese, toss it well and chill it in refrigerator for nearly 30 minutes.
Take out from refrigerator, add fresh tomato and spread it on four bread slices equally.Sprinkle cheese on top.
Toast in oven in grill mode until cheese melts and edges turn golden brown.
